Story of TOBY Our story begins like this: The old cookbooks tell that grandfather Luigi Ricardi left his native Naples to open a well-known house of meals in the vicinity of the dock in New York, where he served for many years stevedores, sailors and travelers. Decades later, the business passed into the hands of his son Pier Paolo, interested from a very young age in combining the wonderful culinary tradition of Neapolitan descent with the most popular dishes of American cuisine. Pier Paolo Ricardi was a lover of cuisine and a tireless researcher, always concerned with the creation of new flavors, innovative and natural sauces and the combination of fresh and healthy ingredients. Many times, once he finished his workday, he spent hours trying new and delicious recipes before returning home. And every night, for weeks, a nice dachshund appeared by the back door of his restaurant waiting for a good ration of leftovers. The cook seemed so determined and good-natured that he named him Toby’s name. One of those nights, the young Ricardi thought it was a good idea to give some of his new recipes to his hairy friend at dawn. Surprisingly, Toby proved to have an exquisite palate. So if the dish was not to his liking, he sat down with his ears down and, if on the contrary, it seemed succulent, he gave a good account of him shaking his tail and placing his paws on the knees of the chef with joy. From that very moment, the letter began to change, showing Toby’s choices, which seemed to please all the diners, and soon, Pier Paolo Ricardi’s restaurant became more and more popular, attracting even celebrities from the art world , business, cinema and television. One day, a regular customer, contemplating Toby’s voracious appetite, commented sarcastically to the successful chef: – Pier Paolo, you better be attentive … That dog of yours is capable of ending all the restaurant’s stocks!
